This Christmas, we are excited to feature coffee from Dídimo Guzmán and his farm La Brasilia, in Tolima, Colombia.

Coffee has been part of Dídimo’s life for as long as he can remember. His parents and grandparents were coffee growers in Huila, where he grew up among coffee trees and the smell of wet parchment. Years ago, Dídimo made the decision to sell the family plot in Huila and move to Tolima, where he found a larger piece of land with the right balance of altitude, soil, and climate. Together with his wife, they built their home and life at Finca Brasilia, located in the Los Alpes hamlet, between the towns of Planadas and Gaitania.

Finca Brasilia sits at 1,800-1,900  meters above sea level, in the central range of the Andes. Dídimo has a strong belief that coffee and nature must grow together. The farm covers about 16 hectares, of which 8 are planted with coffee and the remaining preserved as forest and conservation areas. Guamo and Cedar trees give shade for the coffee, while natural springs provide clean water all year round. Eight hectares remain as pure forest, home to birds and small animals that serve as reminders of why it’s worth protecting the land. 

The cherries are pulped immediately after floating and the mucilage-covered parchment is placed inside clean plastic bags. The fermentation lasts about 40 hours. Once fermentation is complete, the coffee is washed and density sorted. Drying takes place in a covered parabolic dryer for 15 to 20 days, depending on the weather. After drying, the parchment is rested for eight days before packing, helping to preserve the brightness and sweetness that define Didimo’s coffee.
