Finca El Romerillo is located in the district of San José del Alto, Cajamarca, an area characterized by small family farms where coffee production is shaped by close involvement and deliberate decision-making. At approximately 1,750 meters above sea level, the conditions in Caserío Vista Hermosa support steady cherry maturation and provide a stable environment for precise post-harvest work. The farm spans two hectares and is managed by Audina Pérez, who oversees production with a strong focus on process control and consistency. After three years of establishment, El Romerillo entered regular production last year, marking the consolidation of the project rather
than its beginning.
Coffee farming is shared across generations within the family, with Audina’s children also developing their own plots and cultivating high-quality coffees, including Geisha. Audina is directly involved in every stage of post-harvest processing, with particular attention to fermentation management. Her approach is structured and attentive, centered on observation, tasting and adjustment as tools to maintain clarity and balance in the final cup. For this lot, cherries are sealed in bags for three days, followed by pulping and an additional three-day fermentation without washing, allowing for controlled development while preserving structure and definition.
Drying is carried out in solar tents over a period of ten to fifteen days, organized in four stages to ensure even moisture loss and stability. This methodical workflow reinforces consistency throughout the process and reflects the disciplined approach applied across the farm.
