Finca Buenos Aires is owned by producer Policarpo Yossa Rojos and is located in El Mesón in the district of Garzón, Huila. On his farm, Policarpo grows several varieties including Castillo, Tabi, Geisha, Pink Bourbon and Maragogype. This lot is a blend of washed processed Castillo and Tabi and initially stood out for us due to its fruity and complex qualities.
Processing:
Cherries are harvested by hand when ripe before being floated to remove defects. The cherries are dry fermented for 42 hours before being depulped and wet fermented for 70 hours. Once fermentation and washing is complete, the coffee is dried on raised beds for 18 - 22 hours.
