Fredeslinda Calle owns the farm with her brother Dionisio that manages the farm and processing. They are coffee growers in the San Ignacio district, from the caserio (village) of Alto Ihuamaca in north Peru. Their farm is 3 hectares in size and they have been growing coffee here for years.
Harvest runs between July and September during which time Dionisio hires a few pickers. He has a small beneficio where he processes the coffee. The coffee is dry fermented for about 20 hours before being washed and rinsed, and then sun-dried on tarps (plastic patios). Drying takes about 10-30 days on average.
This coffee is part of a sourcing program through an organisation called Origin Coffee Lab. The program is based on good premiums being paid to the producers along with investing in the communities to achieve a consistent supply.
