The Colima farm is located on a slope of the Barva volcano, and due to the very rich soil, this coffee is balanced and chocolatey. Alejo belongs to the fifth generation in his family of coffee producers, whose history of growing in the region goes back more than 100 years. In an effort to preserve the local biodiversity, Alejo has conserved 200 hectares of forest above his farm, believing that the rich biodiversity must be why the coffee is so flavorful. Alejo is also interested in playing with innovative and experimental production and processing techniques, always curious about what may improve his product.
